Thai-Inspired Convertible Soup


A basic Thai broth that can be changed to your liking.

Time: 30 mins.

1 Tbs. vegetable oil

1 green onion, white and green parts, sliced at an angle

2 Tbs. chopped fresh ginger

1 garlic clove, minced

1 or 2 cans vegetable broth*

1 can coconut milk

1/4 cup cilantro leaves, chopped

1 Tbs. lemon juice

A few drops of Tabasco sauce to taste

2 Tbs. fish sauce

In a 2-quart saucepan over medium heat, sauté the green onion, garlic and ginger in vegetable oil.

Add the broth, water, and coconut milk, bring the mixture to a boil, then reduce heat to simmer.

Add the cilantro, lemon juice, Tabasco, fish sauce and add-in(s).

Taste and adjust seasonings as needed.

Simmer until heated through and any meat used is cooked or the vegetables are tender, approximately 10-15 minutes.


Possible add-ins might include 1 cup of any of the following: shredded cooked chicken, beef, or pork;fresh spinach leaves, snow peas, bamboo shoots, mushrooms, baby corn, or other vegetables you have on hand; or 4 oz. of rice noodles.

*If you are using two add-ins, you may want to increase the amount of broth.
