Ingredients

Gazpacho

Mildly spicy, cold celebrattion of summer vegetables.

Time: 2 + hours

2 cups tomatoes, peeled and chopped

1 cup chopped green pepper

1 cup finely chopped cucumber

1 cup chopped celery

1/2 cup finely chopped onions

4 tsp. chopped parsley

2 finely chopped garlic cloves

6 Tbs. red wine vinegar

2 tsp. chopped chives

2 Tbs. extra virgin olive oil

2 tsp. salt

1/2 tsp. pepper

2 cups tomato juice

Mix all ingredients in a large bowl; cover and chill thoroughly.

Serve in chilled bowls or in tall glasses.

 

Prep time actually is pretty quick, about 20 minutes. The time it takes to chill the soup completely varies.
