Creamy Sweet Potato Soup


Easy, fast, and good.

Time: 40 mins.

2 Tbs. oil

2 tsp. ground cumin

1 large onion, sliced

1 1/2 quarts chicken broth

3 sweet potatoes, peeled and cubed

1 3/4 cup plain yogurt

2 Tbs. chopped fresh parsley or cilantro (or 1 Tbs. dried)

1/4 cup toasted pumpkin seeds or raw sunflower seeds (optional)

Heat oil in a soup pot.

Add onions and cumin; sauté 3-4 minutes.

Add potatoes and chicken broth. Reduce heat; simmer 20-25 minutes.

Puree cooked potato mixture in a blender in batches. Return puree to soup pot.

Add yogurt and parsley (and/or cilantro); heat through.

Nice served with seeds sprinkled on top.
