Robin's Godzilla Beans & Rice


A Latin beans and rice dish that can be adapted for vegetarians.

Time: 45 mins.

2 slices bacon chopped

1/2 cup onion, chopped

1/2 cup green pepper, chopped

1/2 cup tomato sauce

2 cloves garlic, minced

1 15-oz. can pigeon peas (Goya Gandules Verdes), undrained

3 cups water

2 cups white rice

1 packet Sazon Goya con Cilantro y Achoite

Heat large skillet over medium heat.

Add bacon, onions, and peppers; cook 3 minutes.

Stir in garlic and cook 2 minutes longer.

Add remaining ingredients EXCEPT the rice and bring the mixture to a boil.

When the liquid boils, stir in the rice and cover the pot.

Reduce heat and simmer for 20 minutes or until the rice is tender.

Remember to stir the mixture once or twice while simmering to prevent the rice from clumping together and to ensure the flavors are completely mixed.


The real name for this recipe is Arroz con Gandules, and the original recipe comes from the can of Goya Gandules Verdes. In a moment of silliness, my sister and I nicknamed it and the name stuck. For a vegetarian version, omit the bacon and use a tablespoon of olive oil to sauté the onion, green pepper and garlic. You’ll still have a complete, protein-packed dish minus any saturated fat.
