Spicy Fried Cabbage

This Chinese-inspired cabbage dish can be a main dish if accompanied by rice.

Time: 20 mins.

1 small cabbage, shredded

4 garlic cloves, minced

2 Tbs. onion, minced

1 Tbs. fresh ginger, minced

1 tsp. red pepper flakes

1 tsp. anise seed

1 Tbs. tamari or soy sauce

2 Tbs. rice wine vinegar

1 Tbs. sugar

1/2 cup raisins

1/4 cup peanuts

2 Tbs. oil for cooking

Salt

In a bowl, combine garlic, onion, ginger, red pepper flakes and anise; set aside.

Separately, in a small bowl, combine tamari, vinegar, and sugar; set aside.

Heat a frying pan over medium-high heat for about 30 seconds to get the pan hot before adding the oil.

Make sure the oil coats the entire bottom of the pan, then add the garlic mixture.

Stir constantly until the spices are fragrant, then add cabbage.

Stir the cabbage until it starts to wilt, then add the tamari mixture.

Cover and let simmer for two minutes.

Uncover, stir, and taste.

Add salt as needed, and adjust other seasonings as desired.
