Sweet Sour Red Cabbage


A German favorite, rotkohl, or red cabbage, is adaptable for vegans.

time: 2 + hours

1 head of red cabbage, shredded

1/2 cup white vinegar

1 cup sugar

1 large onion, sliced

A few pieces of fried bacon, crumbled (Vegans, omit)

1 Tbs. bacon drippings (Vegans, omit)

salt and pepper

1 cup water to start cooking

Apple juice

Fry bacon, reserving 1 Tbs. of the bacon drippings, and drain cooked bacon on paper towel; crumble bacon and set aside for later.

In a 2-quart saucepan, stir together cabbage, vinegar, sugar, onion, bacon drippings (if using) and 1 cup water.

Cook slowly at a simmer over low heat for about two hours, stirring occasionally.

Be sure to keep the liquid level at about 1/2” deep throughout the cooking time by adding apple juice as needed.

To serve, sprinkle reserved crumbled bacon over the top.


The original version of Aunt Kitty’s recipe did not call for apple juice, but its use adds a nice layer of flavor.
