Ingredients

Florentine’s Potato Salad

An interesting meatless German potato salad.

Time:

4-5 large red potatoes

1/2 cup vinegar

1/4 cup sugar

1 beaten egg

2 Tbs. butter

Salt and pepper to taste

In a small saucepan, whisk together the vinegar, sugar and egg and bring to a boil.

When the syrup boils, add the butter and stir to melt; remove from heat.

 

Cook potatoes in boiling water for 12-15 minutes until tender; drain.

While potatoes are hot, slice them in half, then slice the halves thinly.

Pour the syrup mixture over the hot potatoes and gently mix to combine.

Refrigerate until completely cold before serving.
