It's Got It All Salad


Vitamins, minerals, anti-oxidants, phytochemicals, and TASTE, baby!

Time: 20 mins

1 red onion, sliced into thin rings

1 cup chopped tomatoes

1 or 2 carrots, thinly sliced lengthwise (julienned)

1 cup chopped green onions

1 bunch fresh spinach, washed, dried and chopped

1 cup fresh pomegranate seeds *

1 cup finely chopped fresh pineapple (OR one large can pineapple chunks, drained)

1 can Mandarin oranges, drained

1 cup canned garbanzo beans, drained

1 thinly sliced jalapeno

1 cup finely chopped cilantro

juice of one lime

1 tsp. ground cumin

1 tsp. salt

1 Tbs. brown sugar

Romaine lettuce leaves for garnish

Mix all the ingredients together in a large bowl.

Spread the romaine lettuce leaves on a platter, and pile salad on top


* Pomegranates are in season around the winter holidays, but grapes or seasonal berries may be substituted.
