Jim's Garlic Parmesan Wings

Wonderful garlicy wings and a salad—that’s all you need.

Time: 45-50 mins.

2 pounds chicken wings, cut up

2 cups flour

2 teaspoons seasoned salt

1/2 teaspoon cayenne pepper

1/2 teaspoon ground black pepper

1/4 cup butter

2 teaspoons garlic powder

2 tablespoons Parmesan cheese

Cooking oil for frying

Preheat oven to 350°F.

Blend together flour, seasoned salt, cayenne pepper and ground black pepper. Dredge wing pieces in flour.

In very hot oil, fry 5 or 6 wings at a time for about 5-7 minutes until they just begin to brown, then remove them to a wire rack to drain.

Put drained wings on a baking sheet and set into preheated oven.

Bake wings for about 15 minutes or until the chicken is cooked through.

While the wings are baking, melt the butter in a small pan along with the garlic powder.

When the wings are done, put them in a large bowl.

Stir 1 Tbs. Parmesan cheese into the melted garlic butter and pour the mixture over the wings; toss until well coated.

Sprinkle the remaining tablespoon of Parmesan cheese atop the wings and serve.
