Summer Vegetable Ratatouille

Seasoned zucchini, tomatoes, onions and green peppers are great on their own or served over pasta.

Time: 40 min.

large onion, coarsely chopped

1/2 tsp. minced garlic

1 green pepper, coarsely chopped

1/4 cup olive oil

1 tsp. salt

1/2 tsp. pepper

1/2 tsp. dried basil

1/2 tsp. oregano

2 medium zucchini, sliced into 1/2” rounds

3 chopped tomatoes (OR 5Tbs. tomato paste and 3 Tbs. water)

In a heavy pan, over medium-high heat, heat olive oil and sauté the onion, garlic, and green pepper until soft.

Stir in zucchini and sauté a few more minutes.

Add tomatoes and seasonings and stir to mix.

Reduce heat, cover the pan, and simmer gently for 30 minutes or until the vegetables are well cooked.

Uncover and turn up the heat to evaporate some of the liquid.
