Baked Cheese Grits


Oniony, cheesy grits are good as a light meal or a side dish.

Time: 1 hour 30 mins.

Quick grits, prepared according to package directions for four servings

2 garlic cloves, minced finely and divided in half

1 onion, chopped finely 1 onion, finely chopped and divided in half

1 cup shredded cheddar cheese, divided in half

6 slices cheddar cheese for topping

2 eggs


Black pepper

Butter for greasing casserole dish

Make grits for four servings per the directions on the package.

Liberally butter a casserole dish.

Put half the grits into a layer at the bottom of the casserole dish.

Sprinkle half the garlic and half the onion in a layer over the grits.

Sprinkle half the cheese over the garlic/onion layer.

Repeat the layering process: grits, garlic and onions, and cheese.

Whip two eggs and black pepper (to taste) into enough milk* so that it will come half way up the casserole dish with the grits in it; beat until airy.

Pour the milk mixture over the grits in the casserole dish.

Top grits with sliced cheddar cheese.

Cover the casserole dish and bake at 350°F. for 1 hour.

If you want the top crispy, remove the lid for the last 10 minutes of baking.


*The milk amount is not intended to be vague. It will depend on the size of the casserole dish, and may range from 1 to 2 cups.
