Lynne's Foil-baked Fish


Easily steam a complete dinner of fresh fish and vegetables.

Time: 30 mins.

1 lb. firm fish, such as salmon, cod, or catfish

1 or 2 red, yellow, or orange bell peppers (or a combination) sliced into 2-inch strips

2 carrots, peeled, halved, and cut into 3” lengths

1 small onion, halved and cut into 1/4-inch slices

2 garlic cloves minced

4-5 fresh lemon slices

1 teaspoon olive oil

Salt and pepper to taste

Preheat the oven to 450°F.

Pull out a large piece of heavy-duty foil (about 24 inches).

Place the peppers, carrots, onion slices in the center of the foil; sprinkle minced garlic over the vegetables.

Set the fish over the vegetables.

Drizzle olive oil over the fish.

Set lemon slices on top of the fish.

Create a package by drawing up the sides of the foil and rolling the tops of the foil two or three times, leaving a couple of inches of air space above the fish.

Fold each end up and roll over so that no liquid can escape.

Put the fish packet in the middle of an oven rack in the center of the oven.

Cook for 20 minutes.

Remove the packet from the oven and open the packet carefully as very hot steam will escape.
