Breaded Baked Fish


Easy recipe for any mildly flavored fish.

Time: 30 mins.

Vegetable oil

2 lbs. fish fillets (tilapia, trout, orange roughy, cod, haddock, salmon, or similar fish)

4 tablespoons melted butter

2 tsp. lemon juice

2 garlic cloves, minced

1/2 tsp. salt

1/2 tsp. pepper

1/2 tsp. thyme

1/2 cup breadcrumbs

Preheat oven to 425°F.

Lightly oil a 9 x 13-inch baking dish.

Put fish fillets in single layer in the dish.

In a bowl, whisk together the melted butter, lemon juice, garlic, salt, pepper, and thyme.

Pour the butter mixture over the fish fillets, then sprinkle breadcrumbs over the top.

Bake for 20 minutes or until fillets are opaque and flake easily with a fork.

Makes 4 servings.
