Sis' Peanut Butter Pork Loin

Slow roasted to tender perfection, this easy, savory main dish is sure to please.

Time: 3+ hours

1 lb. pork tenderloin, cut crosswise into 8 medallions

2 tsp. lemon pepper

1 Tbs. butter

Sauce:

3 Tbs. lemon juice

3 Tbs. Worcestershire sauce

1 Tbs. Dijon mustard

3 Tbs. minced parsley, chives, or green onion tops

Preheat oven to 225°FSlow roast pork loin at 225°F. for two and a half to three hours until a thermometer inserted in meat reads 160 degrees.

Combine orange juice and peanut butter; brush sauce on roast.

Continue cooking and basting for 15-20 minutes.
