Sis' Oven Barbecued Pork Ribs


When life hands you lemons, make these ribs!


3-4 lbs. pork ribs or loin ribs (also known as country ribs)

1 lemon, washed but unpeeled, very thinly sliced

1 large onion, thinly sliced

Basting sauce:

1 cup catsup

1/3 cup Worcestershire sauce

1 tsp. chili powder

2 dashes Tabasco sauce

11/2 cups water

1 tsp. salt

Salt the ribs and place them in a shallow roasting pan, meaty side up.

Roast ribs for 30 minutes, then drain the excess fat from the pan.

Top each piece of meat with a slice of lemon and a slice of onion.

Combine basting ingredients in a saucepan and bring to a boil.

Pour sauce over ribs and place in oven.

Immediately reduce oven temperature to 350°F.

Baste ribs with sauce every 15 minutes. If sauce gets too thick, thin it with water. Bake until well done, about 1 1/2 hours.


Mom always served these ribs with mashed potatoes and corn.
