Ginger Pork Meatballs

Stop hiding ground pork in meatloaf. Give it a place of honor.

40 mins.

1 lb. lean ground pork

2 cloves minced garlic

1 tsp. ground ginger

1 tsp. light soy sauce

1/4 cup rice wine vinegar

1/2 cup light soy sauce

1/4 cup tomato paste

2 Tbs. honey

1 Tbs. Tabasco sauce *

Mix together sauce ingredients and set aside.

Preheat oven to 350°F.

Combine pork, garlic, ginger and soy sauce in a bowl.

Form pork mixture into 2” meatballs.

Place all the meatballs in a baking dish and bake covered for 20 minutes.

Add the sauce, then bake uncovered for 10 more minutes.

I tend to use less than a tablespoons of Tabasco sauce when I make this for my family because I figure people can add more at the table to suit their individual tastes. If you like milder flavor, go lightly with the Tabasco sauce.
