Lynne's Buttery Chicken Tenders


Awesomely juicy chicken tenders…no sauce required.

Time: 1 hour

1 1/2 lbs. chicken tenders (may substitute boneless chicken breasts)

8 Tbs. melted butter

2 cups seasoned breadcrumbs or crushed seasoned croutons

1 tsp. vegetable oil

Grated parmesan cheese, if desired

Preheat oven to 350°F.

Lightly oil a shallow baking dish with 1 tsp. vegetable oil; set aside.

Put the melted butter and the breadcrumbs into separate dishes.

Trim any fat off the chicken; if using chicken breasts, discard the skin.

Pat chicken dry with paper toweling.

Dip chicken in butter, then roll it in the breadcrumbs; reserve remaining unused butter.

Set chicken in prepared baking dish.

Cover the baking dish with aluminum foil and use a fork to poke a few holes in the top of the foil.

Bake the covered chicken for 45 minutes; remove foil, then drizzle on reserved butter.

If desired, sprinkle the tenders with a little grated parmesan cheese.
