Pomegranate Balsamic Chicken



Time: 1 + hour

6 boneless, skinless chicken breasts

1 cup pomegranate balsamic vinegar

1 tsp. chopped garlic

2 Tbs. brown sugar

1/8 c. honey

Preheat oven to 375°F.

Mix together 1 cup pomegranate balsamic vinegar, 1 tsp. chopped garlic, 2 Tbs. brown sugar and 1/8 c. honey—You can microwave the mixture for 20 seconds to help dissolve the brown sugar, if desired.

Put the chicken and marinade in a gallon-sized ziplock bag for 30 minutes; leave at room temperature.

To cook, remove chicken from bag, but SAVE the marinade.

Put chicken into a glass baking dish and bake for 30 minutes.

Meanwhile, take the reserved marinade and put it in a small saucepan.

Boil the liquid until it is reduced by half to make a sauce.

When the chicken is done cooking, pour the sauce over it.
