North African Spicy Chicken


Tender chicken in a lemony tomato sauceā€”so good that the chickens volunteer for it!

Time: 1 hour 30 mins.

1 3-lb. chicken, cut up into serving pieces

4 tsp. salt

4 garlic cloves, crushed

3/4 tsp. cayenne pepper

2 tsp. turmeric

1/4 cup olive oil

2 medium onions, chopped

4 whole cloves

2 tsp. cumin seeds

1 tsp. coriander seeds

1/2 cup tomato sauce

3/4 cup water

2 lemons, juiced

Combine salt, garlic, cayenne and turmeric.

Rub mixture onto skin side of chicken pieces; set aside for 15 minutes.

Heat oil in a large, heavy frying pan.

Brown both sides of chicken in oil; remove browned pieces to a plate.

In the same oil, lightly fry the chopped onion until just soft.

Stir in cloves, cumin, and coriander and continue frying for a few minutes.

Stir in tomato sauce and water.

Return chicken to pan and cover the pan tightly.

Simmer for 45 minutes.

Check chicken; taste sauce, and adjust seasonings, if needed.

Add the juice of two lemons to the sauce and mix in.

Simmer an additional 15 minutes.

Serve with basmati rice and a side of plain yoghurt or with noodles.
