Indonesian Ginger Chicken


Quick cooking time makes up for long marinating time and the result is SO good!

Time: 1 hour +

1 cup honey

1/4 cup minced garlic (8-12 cloves)

3/4 cup soy sauce

1/2 cup peeled, grated fresh ginger root

2 chickens, quartered, with backs removed

Cook the honey, soy sauce, garlic and ginger over low heat until the honey is melted. Arrange chicken in one layer in a shallow baking pan, skin side down, and pour the sauce over the chicken.

Cover pan tightly with foil and marinate overnight in the refrigerator.


Preheat oven to 350°F.

Place the foil-covered baking pan with the marinated chicken in the oven and bake for 30 minutes.

Uncover the pan, turn the chicken skin side up, and raise the oven temperature to 375°F.

Continue baking for 30 minutes or until the juices run clear when you cut between a leg and thigh.


Actual cooking time is about 1 hour. Marinating time should be 12 hours or more.
