Garlicy Chicken


Lots'a garlic, the way we like it.

Time: 45-60 mins.

3/4 cup olive oil

1 3-4 lb. chicken, cut into eighths

1/2 tsp. salt

1 tsp. ground pepper

10 cloves peeled garlic, smashed with the side of a knife or put through a garlic press

1 tsp. rosemary

1 tsp. oregano

1 cup chicken broth

Heat olive oil until hot.

Add chicken pieces; brown.

Season chicken with salt and pepper.

Add the garlic, rosemary, and oregano, stirring to distribute the seasonings.

Pour broth over chicken.

Simmer over low heat until liquid is reduced by half.

Check chicken for doneness. When chicken is done, serve with pan juices.
