Cinnamon Chicken


Adapted from a recipe of Laura Ingalls Wilder.

Time: 1 hour

1/2 cup flour

2 tsp. salt

3/4 tp. cinnamon

1/4 tsp. turmeric

1/4 tsp. pepper

1 egg

2 Tbs. milk

1 lb. chicken breast, sliced into tenders

1/3 cup Panko breadcrumbs

2 Tbs. oil

Preheat oven to 375 °F.

Combine flour, salt, cinnamon, turmeric, and pepper.

Beat egg and milk.

Coat chicken pieces with flour mix.

Combine Panko breadcrumbs and remaining flour mixture.

Dip chicken into egg mixture and coat with Panko breadcrumbs.

Arrange in a roasting pan.

Sprinkle each tender with a little oil.

Bake until crisp and brown, about 30-40 minutes.
