Chicken Divan


Creamy, cheesy chicken & broccoli.

Time: 45 mins

6 boneless, skinless chicken breasts

1 package frozen chopped broccoli, cooked per package directions

Basic White Sauce*

1/4 to 1/2 lb. sharp cheddar cheese, shredded

1 Tbs. lemon juice

Pinch of sage


Basic white sauce ingredients:

3 Tbs. butter

3 Tbs. flour

1/4 tsp. salt

dash of pepper

11/4 cups chicken broth or stock

To make white sauce:

Melt butter in saucepan.

Stir in flour and seasonings.

Cook over medium heat until bubbly.

Add liquid slowly, stirring with wire whisk to prevent lumps.

Cook until thick, remove from heat, and set aside.


Preheat oven to 350°F.

Butter the bottom of a casserole dish or a 9x13-inch baking pan.

Tear chicken into large pieces; lay pieces in the buttered pan.

Spread cooked broccoli over the chicken.

Mix basic white sauce, cheese, sage, and lemon juice until well blended. Dilute with water if necessary.

Pour mixture over chicken and broccoli. Cover with foil.

Reduce oven temperature to 325°F; put chicken in the oven and bake for 20-25 minutes.


*The original recipe called for 1 can cream of chicken soup (or cream of mushroom or cream of celery soup. I don’t encourage their use, but it’s your life and I won’t judge.
