Cheesy Chicken & Spaghetti


Cheesy Chicken & Spaghetti

Time: 1 hour

4 boneless, skinless chicken breasts (11/4 lbs.)

1 egg, slightly beaten

3/4 cup. Italian seasoned dry breadcrumbs

1 28-ounce jar pasta sauce (use a quality organic brand)

1 cup shredded mozzarella cheese (4 ounces)

8 oz. spaghetti

1 Tbs. olive oil

Preheat oven to 400°F.

Put a pot of water on medium-high heat for boiling the pasta.

Dip chicken in egg, then breadcrumbs, coating well.

In a 13” x 9” baking pan, arrange chicken.

Bake uncovered for 20 minutes.

After 20 minutes, pour pasta sauce over partially cooked chicken.

Sprinkle shredded cheese over the sauce and return pan to oven for an additional 10 minutes.

While chicken finishes baking, cook spaghetti to the al dente stage (10 minutes). Drain spaghetti; toss with olive oil.

Serve chicken atop a portion of spaghetti.
