Jean's Meatloaf


Just like mom used to make. No kidding! It’s my mother-in-law’s recipe.

Time: 1 hour 15 mins.

1 1/2 to 2 lbs. ground beef

2 eggs

1 8-ounce can tomato sauce

1/2 cup onion, finely chopped

2 Tbs. green pepper, chopped finely (optional)

1 bay leaf

1 1/2 tsp. salt

Dashes of dried oregano, thyme, and/or marjoram (optional, but really good)

Preheat oven to 350°F.

Mix all ingredients together well in a large bowl.

Shape mixture into a loaf and place in a shallow baking dish.

Bake for one hour.


If desired, pour catsup or chili sauce over the top of the meatloaf after the first half hour of cooking time has passed
