Lemon Loaf


Lusciously lemony & lighter than pound cake. Have two pieces.

Time: 1 hour

1 1/2 cups flour

1/2 tsp. baking soda

1/2 tsp. baking powder

1/2 tsp. salt

3 eggs

1 cup sugar

2 Tbs. softened butter

1 tsp. vanilla

1 tsp. lemon extract

1/3 cup lemon juice

1/2 cup coconut oil (or vegetable oil)


1 cup plus 1 Tbs. powdered sugar

2 Tbs. milk

1/2 tsp. lemon extract

Preheat oven to 350° F.

Combine flour, baking soda, baking powder and salt in a bowl.

In a separate bowl, use a mixer to blend together the eggs, sugar, butter, vanilla, lemon extract and lemon juice.

Pour wet mixture into the dry ingredients; blend until smooth.

Add the oil and mix well.

Pour batter into a well greased 9x5-inch loaf pan.

Bake for 45 minutes or until a toothpick stuck into center of the cake comes out clean.

Let cool completely before adding icing.



Combine icing ingredients in a small bowl, mixing until smooth.

Apply the icing to the loaf and let it set before slicing and serving.
