Potato Chip Cookies

Salty-sweet and surprisingly good.

Time: 1 hour +

1 lb. butter

1 cup sugar

3 1/2 cups flour

2 tsp. vanilla

11/2 cups crushed potato chips

Confectioner's sugar

Preheat oven to 350°F.

Cream butter and sugar, then mix in flour and vanilla.

Stir in crushed potato chips, mixing by hand.

Drop dough by teaspoonfuls (or roll into walnut-sized balls) onto ungreased cookie sheets, flattening lightly with hand.

Bake for 12-15 minutes, but watch so they don’t burn.

Remove from oven and cool for a few minutes before sprinkling with powdered sugar.
