Lynne's Lace Cookies

A delicate, crispy version of oatmeal cookies.

Time:

1 cup quick-cooking oatmeal

1 cup sugar

2 Tbs. plus 1 tsp. flour

1/4 tsp. salt

1 egg, slightly beaten

1/2 cup melted butter

2 tsp. vanilla

Preheat oven to 350°F.

Line cookie sheets with aluminum foil.

Combine all ingredients in a bowl and mix well.

Drop dough by 1/2 teaspoonfuls three inches apart onto aluminum foil-lined cookie sheets; these really spread, so put only nine cookies on each sheet.

Bake 6-8 minutes, watching carefully (!) until the edges of the cookies are brown.

When the cookie edges are brown, they are done.
