Sis' Fudge Ball Cookies

Chocolate and walnut bite-sized bits of bliss.

Time: 1 hour +

1 cup butter

1 cup sugar

1 egg

11/2 cup chopped walnuts

1/4 tsp. salt

1 tsp. vanilla

3 cups sifted flour

1/2 cup cocoa powder (use the good stuff)

2 slightly beaten egg whites

Preheat oven to 350°F.

Line cookie sheets with parchment paper or Silpats, or use ungreased cookie sheets.

In the bowl of an electric mixer, cream butter and sugar until light and fluffy.

Add egg, salt, and vanilla and beat well.

Sift flour and cocoa together; add to creamed mixture and mix until completely blended.

Turn out dough onto waxed paper and divide the quantity into fourths.

Divide each fourth into 18 (or more) small balls by rolling the dough between the palms of your hands.

Dip each ball into egg white, then press into nuts, coating all sides,

Reshape into balls and set two inches apart on ungreased cookie sheets.

Bake for 12-15 minutes.

 

Smaller cookies take less time. Make a test batch of a half-dozen cookies at the lower temperature and see if you need to adjust the baking time for the size of the balls you made.

Yield: 6 dozen or more cookies, depending on how small you roll them.
