Strawberry Banana Muffins


Fresh strawberries and bananas make these muffins a fruit-filled fiesta.

Time: 35-40 mins.

1 egg

2/3 cup sugar

6 Tbs. melted butter

1 tsp. vanilla

2 bananas, mashed

1 1/2 cups flour

3/4 tsp. baking soda

1/2 tsp. cinnamon

1/4 tsp. salt

1 cup chopped strawberries

Preheat oven to 350°F.

Line a muffin tin with paper liners and set aside.

In the bowl of an electric mixer, beat together egg and sugar until well combined.

Mix in melted butter and vanilla.

Add bananas and mix until well combined.

In a separate bowl, whisk together the flour, baking soda, cinnamon and salt.

Add strawberries to the flour mixture and toss to coat; this prevents them from settling at the bottoms of the muffins.

Add the flour mixture to the egg mixture and mix until just combined; do not over mix.

Using an ice cream scoop, add batter to liners in muffin tin.

Bake 20-25 minutes or until a toothpick inserted in a muffin comes out clean.

Cool for a couple minutes in the muffin tin before removing muffins to a wire rack to cool completely.


This recipe will work with dried strawberries, too.
