Carrot Apple Muffins

Sweet carrots and apples guarantee moist muffins.

Time:

2 cups all-purpose flour

2 tsp. baking soda

2 tsp. cinnamon

1/4 tsp. salt

1 1/4 cups sugar

2 cups finely shredded carrots

3 large eggs

1/2 cup vegetable oil

1 cup applesauce

2 tsp. vanilla

Preheat oven to 350°F.

Line a muffin tin with paper liners.

In a large bowl, sift together flour, baking soda, cinnamon, salt and sugar.

Fold in shredded carrots.

In a separate bowl, whisk together the eggs, oil, applesauce and vanilla.

Add the dry ingredients to the wet ingredients and stir until well combined.

Divide batter into muffin cups.

Bake for 20 minutes.

Makes 18 muffins.
