Sis's Cherry Coffee Cake


A family favorite from childhood Christmases, this is good any time of year.

Time: 45-50 mins.

2 cups sifted flour

1 cup sugar

1 large can cherry pie filling

½ cup butter

2 tsp. baking powder

1 egg


Shortening for greasing pan

For topping:

1 cup flour

1 cup sugar

½ cup butter

Preheat oven to 400°F.

Sift flour, sugar, and baking powder together.

Cut in butter as for pie crust.

Break the egg into a measuring cup and add milk to make 1 cup of liquid.

Beat egg into the milk.

Add the liquid to the flour mixture and mix well.

Pour batter into a greased and floured 15 x 10 x 1" pan (a jelly roll pan). Cover with cherry pie filling.


Make topping by combining:

1 cup flour

1 cup sugar

½ cup butter

Sift the flour and sugar together.

Cut in butter until the mixture resembles coarse crumbs.

Sprinkle the topping over the pie filling.

Bake for 30-35 minutes.


The original recipe calls for cherry pie filling, but blueberry or peach are equally good choices.
