Sis's Carrot Cake


Simple carrot cake is terrific frosted with vanilla buttercream.

Time: 1 hour 10 mins.

1 1/2 cups vegetable oil

2 cups sugar

4 eggs

2 cups grated carrots

1/2 cup chopped nuts (mom used walnuts)

3 cups flour

1/2 tsp. salt

2 tsp. baking soda

2 tsp. baking powder

Preheat oven to 350°F.

Lightly grease a tube pan and set aside.

In the bowl of an electric mixer, on low speed, beat eggs well, then add sugar and oil and beat to incorporate.

Mix nuts and carrots together separately.

Slowly add dry ingredients a little at a time to the mixer bowl, incorporating fully before adding more.

When all ingredients have been mixed, turn batter out into greased pan.

Bake for about 1 hour or until toothpick inserted in cake comes out clean.


Mom used walnuts, which I consider the best choice, but pecans work nicely.
