Blueberry Cake


Incredibly moist blueberry treat with a lovely streusel topping.

Time: 1 hour 20 mins.

3/4 c. sugar

1/4 c. vegetable oil 1 egg

1/2 c. milk

2 c. flour

2 tsp. baking powder

1/2 tsp. salt

2 c. blueberries, well drained

Topping ingredients:

1/4 c. butter

1/2 c. sugar

1/2 c. flour

1/2 tsp. cinnamon

Preheat oven to 375°F.

Grease and flour a 9-inch square pan.

In a small bowl, mix topping ingredients together with a pastry cutter until the mixture is fine and crumbly; set aside.

In a large bowl, cream together sugar, oil and egg until lemon colored, then stir in milk.

Sift together flour, baking powder and salt.

Stir dry ingredients into the creamed mixture.

Gently fold in blueberries.

Turn batter out into greased and floured pan.

Sprinkle topping mixture over batter.

Bake the cake for 45-50 minutes.

Cool cake completely before serving.
