Zucchini Bread


Moist, delectable zucchini bread, good with or without butter.

Time: 1 hour 20 mins.

3 eggs

1 cup vegetable oil

1½ cup sugar

2 cups shredded zucchini

2 cups flour

¼ tsp. baking powder

2 tsp. baking soda

3 tsp. cinnamon

1 tsp. salt

1 cup nuts (walnuts or pecans are good)

Preheat oven to 375°F.

Grease and flour two 9 x 5 x3” loaf pans; set aside.

In a mixing bowl, beat the eggs.

Stir in oil, sugar, and zucchini.

In a separate bowl, mix flour, baking powder, baking soda, cinnamon and salt.

Stir dry ingredients into egg mixture.

Add nuts and stir.

Pour dough into greased and floured bread pans.

Bake for 1 hour.

Cool loaves for 10 minutes before removing them to a rack to finish cooling.
