Pumpkin Bread


Makes two delicious loaves—one to keep and one to share.

Time: 1 hour 30 mins.

3 cups sugar

4 eggs

1 cup vegetable oil

2 cups pumpkin puree

1 tsp. vanilla

1 tsp. ground cinnamon

1 tsp. ground allspice

3 1/3 cups flour

2 tsp. baking soda

2/3 cup water

1 cup chopped walnuts or pecans (optional)

Preheat oven to 350°F.

Mix all ingredients together in a large mixing bowl, stirring well to incorporate wet and dry ingredients.

Pour dough into two 9 x 5 x3” loaf pans (or three small loaf pans).

Bake for 70 minutes.

Cool loaves for 10 minutes before removing them to a rack to finish cooling.
